Grilled Shrimp & Herby Ricotta Bruschetta (Because Lunch Deserves Drama Too)

Sometimes, you want a meal that’s a little extra. Toasted sourdough, creamy herb-whipped ricotta, and garlicky shrimp all stacked like you’re trying to seduce yourself. This isn’t a grab-and-go lunch. This is a take-a-bite, close-your-eyes, and sigh kind of situation.

I made this for no one. I plated it like I had guests. I sat in the sun and ate it alone. It was perfect.

Ingredients:

For the Whipped Ricotta Spread:

  • 1 cup whole milk ricotta

  • ½ cup thawed frozen peas

  • 1 garlic clove

  • 1 tbsp fresh lemon juice

  • Zest of 1 lemon

  • ¼ cup fresh basil

  • Salt & pepper to taste

  • Optional: 1 tbsp olive oil (for smoothness)

For the Shrimp:

  • 12 large shrimp, peeled & deveined

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • Salt, pepper, and a pinch of red chili flakes

  • Juice of ½ lemon

For Assembly:

  • 4 slices of rustic sourdough or baguette

  • Olive oil (for brushing)

  • Fresh parsley or basil to top

Instructions:

  1. Make the Spread: In a food processor, blend ricotta, peas, garlic, lemon juice + zest, basil, salt, pepper, and olive oil until smooth. Taste and adjust seasoning. Set aside.

  2. Toast the Bread: Brush bread slices with olive oil and grill or toast until golden and slightly charred.

  3. Cook the Shrimp: In a skillet over medium heat, cook shrimp with olive oil, garlic, chili flakes, salt, and pepper for 2–3 mins per side. Finish with lemon juice.

  4. Assemble: Spread a generous layer of the herby ricotta on each toast. Top with 2–3 shrimp. Garnish with herbs and serve immediately.


Serving Notes:

Serve this when you want to feel like the main character. Best eaten outside, barefoot, with a chilled drink and no notifications.
